Pizza the Sicilian way. Pan pies — thick, crispy-bottomed, and square, it traces its inception back to sfincione (Sfin-cho-nay) meaning "soft sponge" and is one of the OG street foods found in Palermo. We also make a classic round based on Faccia di Vecchia (FAH-chah dee VEK-kyah) meaning old woman's face because of its round and dimpled texture. Sixteen inches, stretched by hand and cooked on stone.
Italian immigrants in New Orleans are Sicilian and New Orleans cuisine is born out of the mix of cultures that immigrated here, so this is where New Orleans pizza is born! Our sauce is a red gravy, almost like a sauce piquante. You ain't had no pizza like dis.
